The details that matter most when substituting equipment are using dark-roasted Vietnamese Robusta or a similar strong coffee, using a stronger-than-usual ratio of coffee to water, and pairing the finished coffee with condensed milk in the glass.
Published ratios vary considerably by method and source, so this page treats each alternative's numbers as a documented starting point rather than a single fixed standard. Adjust strength to taste, the same approach used elsewhere on this site for phin ratios.
Method 1: French press
The French press is the most commonly recommended phin substitute across the sources reviewed for this page, though recommended ratios vary widely. A practical starting point is 20g of coarse-ground, dark-roasted Robusta to somewhere between 80ml and 180ml of hot water, around 93-96°C/200-205°F, steeped for 4 to 5 minutes before pressing.
Rinse the French press with hot water first to prevent temperature shock, add the grounds, pour in the water, stir gently, let it steep, then press the plunger down slowly and evenly. Pour the finished coffee over condensed milk in a serving glass, exactly as described in the finishing section below.
Method 2: Moka pot
A moka pot produces a concentrated coffee through steam pressure, which several sources describe as a workable substitute for phin coffee's strength once combined with condensed milk. Fill the bottom chamber with water up to its safety valve, add medium-fine ground Robusta to the basket without tamping it down, assemble the pot firmly, and place it on medium-low heat.
Remove the moka pot from heat as soon as you hear gurgling or a hissing sound, since higher heat or over-brewing can make the coffee taste burnt or overly bitter. If the result tastes too strong once combined with condensed milk, dilute it slightly with a tablespoon or two of hot water before serving.
Method 3: AeroPress
The AeroPress offers more control over brew strength and time than a French press or moka pot. One documented method uses 20g of coffee and about 118ml of water at 200°F, pressed slowly over 2 to 3 minutes. Another uses 30g of coffee, a 20 to 30 second bloom, and 180g of total water, pressed directly onto condensed milk.
Wet the AeroPress filter with hot water, add your ground coffee, and pour a small amount of water to saturate the grounds evenly. Let it bloom, slowly pour in the remaining water, then steep for the method's specified time before pressing down slowly and evenly.
Method 4: Pour-over
A standard pour-over dripper and filter can also produce a coffee strong enough to pair with condensed milk, though it requires attention to grind size and pour technique. Use a medium-coarse grind, similar to what you would use for a French press, then bloom the grounds briefly before pouring the remaining hot water slowly and evenly in a circular motion.
Because a standard pour-over filter can produce a comparatively lighter cup than a phin or French press, consider using a slightly higher coffee-to-water ratio than you would for a typical pour-over brewed for drinking black.
Finishing any method the Vietnamese way
Regardless of which brewing method you use, the finishing steps are what make the result recognizably Vietnamese. Add 1 to 2 tablespoons of sweetened condensed milk to the bottom of your serving glass, then pour the freshly brewed, strong coffee directly over it.
Stir well to combine the coffee and condensed milk before drinking, or, for an iced version, stir the mixture together first and then pour it over a glass filled with ice. The goal is a coffee strong enough that condensed milk sweetens and softens it, rather than diluting it into a standard cup of coffee with milk.
